British Columbia Wild Mushrooms - Dried
These wild mushrooms are picked with respect and care towards nature. They are handled gently and delicately because most mushrooms are sensitive to rough handling and bruise easily. Quality suffers when appropriate care isn't taken throughout the harvesting and processing stages. This is one of the reasons why small, family operations can often have the best quality products.
A small amount of dried mushrooms can go a long way in your kitchen, and they can last for years when stored properly. Store unused mushrooms in an air-tight container in a cool, dry, dark place — your cupboard, cabinet or pantry is usually fine. They can be crumbled and added directly to soups, sauces or stews. For use in other recipes, or to saute by themselves (the best way to really experience the flavour!), rehydrate by soaking in very warm water (or stock, or wine) for 30 - 45 minutes, depending on size and variety. Morels take a little less time, around 20 - 30 minutes. Check the look and feel to see when they're ready. Drain well. Be sure to strain (fine sieve or cheesecloth) and save the soaking liquid — you've now created a rich, mushroom stock for use in your favourite recipes!
